Caviar distribution is similar to that of wine. Connoisseurs will look for the rarest and the most expensive types of caviar. In the past, such fine caviar was the preserve of royalty.

You can still access Beluga caviar. The declaration that it was an endangered species meant it was no longer legal to buy it. But after conservation efforts and the passing of time, you can access it if you so wish.
Here is a fun fact: the most expensive caviar known comes from a fish 100 years old. The up to 100-year-old Iranian beluga sturgeon produces Almas caviar, which fetches some ridiculous prices in the open market, nothing less than five figures.
